For the dough:
- 2 cups All Purpose Flour (Maida)
- Salt as per to taste
- 1-1/2 teaspoon Baking powder
- For the filling:
- 1 cup Chicken, boiled and minced
- 1/2 cup Green peas (Matar) , boiled
- 1/2 cup Onions, finely chopped
- 1 tablespoon Garlic, finely chopped
- 1/2 tablespoon Ginger, finely chopped
- 1/2 tablespoon Soya sauce
- Salt to taste
- 1 Fresh Red chillies, or green chilli
- 1/4 tablespoon Whole Black Peppercorns, crushed
Boil green beans and set aside. Crush garlic and ginger or mince. To make the dumpling shell
In a bowl, add the refined flour, salt, baking powder and water; and when the dough seems crumbly, knead it into a thick dough with water and leave it alone for about 20 minutes, cover with a damp cloth to prevent the dough from drying out. To make chicken filling
Heat a tablespoon of oil in a pan and add chopped green or red peppers, onion, minced ginger, and garlic. Stir-fry for about 4-5 minutes, then add minced chicken and boiled peas and mix well.
Turn off the heat and stir in the soy sauce, salt, and black pepper. Be careful when adding salt because soy sauce also contains salt. Divide the dough into equal parts. Shape them into balls and spread them thinly in a circle. You can also make momos using molds, which will make the process easier.
Take a plate of dough, moisten its edges, and place a piece of chicken, peas and sautéed vegetable filling in the center, bringing the edges together to cover the filling, turning carefully to coat the fillings as you cook. Roll the edges deftly for chicken momos. Repeat the process until you run out of dough and filling. Meanwhile, prepare a steaming pot of dimsum or dhokla-idli and pour in water and bring to a boil. Place ingredients on a steamer and steam for 15-20 minutes or until ingredients are cooked through.
Serve chicken momos (delicious steamed chicken dumplings) with chili garlic sauce or mayonnaise for an evening snack.
